Crock Pot Buddies – Mexican Chicken

This recipe goes out to the Crock Pot Buddies (CC Fowler and The Harried Mom). We eat this quite often in my house since it really requires no prep work

Mexican Chicken

4 boneless, skinless chicken breasts
1 jar salsa
1 can black beans (drained and rinsed)
1 can corn (drained)
shredded cheese

Dump half the jar of salsa into crock pot and mix in the beans and corn. Place the chicken on top of the mixture and top with remainder of salsa. Cook on low 5-7 hours. About 10-15 minutes before you are going to serve, add the shredded cheese.

Serve over rice with a dollop of sour cream and enjoy ๐Ÿ™‚
